Ingredients :

Kondakadalai | White Chana / Chick Peas - 1cup (soaked overnight)
Red Chili Powder - 1 tsp
Coriander Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Onion - 1 no (chopped)
Tomato - 3 nos (chopped)
Ginger - 1" long
Garlic - 5 cloves
Cinnamon Stick - 3 nos (2" long)
Cloves - 4 nos
Cardamom - 2 nos
Cashewnut - 10 to 15 nos
Coriander Leaves - 2 tbsp (chopped
Curry leaves - 2 stks
Salt To Taste.
Method :
Preparation: Wash and soak the kondakadalai | chana for overnight with enough water. Pressure cook the soaked chana with the turmeric powder, required salt and a cup of water for an whistle and five minutes over simmer. When all the steam has escaped, open the pressure cooker pan and keep aside.
To make the masala for chana gravy, Heat the oil in a kadhai or frying pan, roast the cinnamon stick, cloves and cardamom. Add the onion, ginger and garlic saute till the onion turns slightly golden colour. Add the tomato and cashew-nuts, saute until the tomato turns soft. Add the red chili powder, coriander powder and required salt, stir well until the masala's raw smell leaves. Finally add the coriander leaves and curry leaves, stir well for few seconds. Turn off the flame and allow to cool completely. Grind into fine paste and the masala is ready to make the gravy.
To make the chana masala gravy, In the same kadhai, add ground paste and pressure cooked chana with its water, mix well and bring to boil. Cook for three to five minute. Finally garnish with the coriander leaves and ready.
Notes: Soak the chana for overnight or atleast eight hours. Use the chana cooked water into the gravy for good taste. Cook the masala well, paste it and than use into the gravy.
