Drumstick Sambar - Pressure Cooker Cooking Method | முருங்கைக்காய் சாம்பார் - South Indian Recipe


Drumstick Sambar


Ingredients :

Drumstick Sambar Ingredients

Drum Stick - 1 no (cut into 3"long)
Toor Dal - 1/2 cup
Shallots - 1/2 cup (else Large Onion - 1no)
Tomato - 2 no (chopped)
Green Chili - 3 no (no need to chop)
Tamarind Water - 1 cup (1" ball size) (optional)
Red Chili Powder -  1 tsp
Coriander Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Asafoetida - 1/4 tsp
Coriander Leaves - 2 tsp (chopped) + garnish
Oil - 1 tsp
Water - 1 and 1/2 cup + 1 cup
Salt to taste.

To Temper :

Shallots - 1 tbsp (finely chopped)
Mustard Seeds - 1/4 tsp
Fenugreek - 1/4 tsp
Urad Dal - 1/4 tsp
Curry Leaves - 2 stk
Oil - 2 tsp

Method :

Steps To Make Drumstick Sambar :
  • Pressure cook the dal with turmeric powder, asafoetida, oil and 1 and 1/2 cup of water for 1 whistle and 3min in simmer. (Image 1)
  • When all the steam has escaped, open the pressure cooker pan, add in red chili powder, coriander seeds powder and tamarind water, mix well. (Image 2)
  • Add in onion, tomato, green chili, drumstick, coriander leaves, 1 cup of  water and required salt, mix well. (Image 3)
  • Again cook for 1 whistle, when all the steam has escaped, open pressure cooker pan and keep aside.

  • Meantime temper the mustard seeds and urad dal in hot oil in a utensil, after splutter add fenugreek and saute for few seconds. (Image 4)
  • Add in onion and curry leaves, saute til the onion becomes light golden brown colour. (Image 5)
  • Pour in pressure cooked sambar, mix altogether, bring to boil and ready to serve. (Image 6 and 7)

    Serving Suggestion : Serve hot with Crispy Potato Fry , Mushroom 65 , Appalam and Ghee.
