Country Chicken / Nattu Kozhi Dum Biryani


Ingredients :

Country Chicken / Nattu Kozhi Dum Biryani Ingredients

Country Chicken / Nattu Kozhi - 500gm (chopped)
Basmati Rice - 2 cup (soaked minimum 30mins)
Onion - 2 no (chopped)
Tomato - 2 no (chopped)
Green Chili - 5 no (slit)
Ginger Garlic Paste - 2 tsp
Red Chili Powder - 1 and 1/2 tsp
Cumin Seeds Powder - 1 tsp
Peppercorn  Powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Mint Leaves - 1/2 cup
Coriander Leaves - 1/2 cup (chopped)
Bay Leaves - 2 nos
Cinnamon Stick - 4 no (2" long)
Fennel Seeds - 1/4 tsp
Cloves - 5 no
Cardamom - 3 no
Mace - 1 no
Star Anise - 1 no
Curd - 1/4 cup
Lemon - 1/2 fruit juice
Water - 1 cup
Saffron - 1/2 tsp (soaked in hot water) or (Food Colour )
Ghee - 2 tbsp
Curry Leaves - 2 stk
Salt to taste.

Method :


Steps To Make Country Chicken Dum Biryani :
  • Heat ghee in a pressure cooker pan, roast bay leaves, cinnamon stick, star anise, fennel seeds, cardamon, cloves and mace.
  • Add onion and curry leaves, saute until the onion becomes half golden brown colour. Add ginger garlic paste, saute until its raw smell leaves.
  • Add tomato and green chili, saute until the tomato becomes tender.


  • Add country chicken pieces, saute til its moisture reduced completely .
  • Add beaten curd and saute for about 2 minute.
  • Add red chili powder, cumin seeds powder, peppercorn powder, turmeric powder and required salt (for chicken), saute until its raw smell leaves.


  • Add coriander leaves and mint leaves, saute for few seconds.
  • Pour water and close the lid, cook for 1 whistle and 10 minute in simmer (cook upto 75 to 80 percent only).


  • In the mean time, boil the water (5cups) with oil (4tsp) and required salt. Add in soaked rice and cook for 3 to 5 minute or upto 75 - 80 percent only. Then drain the water and keep aside.


  • Now when all the steam has escaped, open the pressure cooker pan, add rice, saffron water or food colour, mint leaves (2 tsp) and coriander leaves (2tsp).



  • Now to dum, use tight lid to close the pan or use towel and lid to close the pan, also put some weight (i used boiled rice water) over the lid (shown in above image).
  • Cook for 15mins in simmer. Then mix well and ready to serve.

Serving Suggestion : Serve hot with Boiled Egg and Onion Raita.
