Yellow Pumpkin / Parangikai / Manjal Poosanikai Halwa


Ingredients :

Yellow Pumpkin / Parangikai / Manjal Poosanikai Halwa

Yellow or Orange Pumpkin - 3 cups (de-skinned, de-seeded and grated)
Milk - 2 cups
Sugar - 1/2 cup (+ or -)
Cashewnuts - 20nos
Cardamom - 5nos (crushed or powder)
Ghee - 1/4 cup

Method :

Yellow Pumpkin / Parangikai / Manjal Poosanikai Halwa

  • First roast Cashewnuts with 3tbsp of Ghee and keep aside.

  • Now add grated Pumpkin and saute for 10mins until raw smell leaves.

  • Then add boiled Milk and stir well continuously until thick consistency.

  • Now Add Sugar and again stir well continuously until thick consistency.

  • Add remaining Ghee and stir well until Ghee separates from Halwa.

  • Finally add roasted Cahewnuts and Cardamon, mix well and ready to serve.

Serving Suggestion : Serve hot or cool with Crispy Butter Murukku / Thenkuzhal Murukku
