Hot and Sweet Pumpkin / Parangikai / Manjal Poosanikai Kootu


Ingredients :

Hot and Sweet Pumpkin / Parangikai / Manjal Poosanikai Kootu

Pumpkin / Parangikai - 1 cup (finely chopped)
Besan Gram (skinless, split) - 1/4 cup
Green Gram (skinless, split) - 2 tbsp
Coconut Paste - 3 tbsp
Red Chili Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Jaggery Powder - 1 tbsp
Curry Leaves - 2 stks
Mustard Seeds - 1/4 tsp
Urad Dal - 1/4 tsp
Water - 2 cups
Oil - 1 tbsp
Salt to taste.

Method :
 
  • First Soak Green Gram and Besan Gram for 1 hour and drain water.

  • Now in a Pressure Cooker Pan, add soaked Green Gram and Besan Gram, Turmeric Powder and 1 cup of Water, cook for 1 whistle and 3mins in simmer.
  • When all the steam has escaped, open Pressure Cooker, add Coconut Paste, Red Chili Powder, required Salt and Pumpkin, saute for few seconds.

  • Then add 1 cup of Water, mix well and again cook for 1 whistle.
  • In the meantime, to temper, heat Oil in a Kadai, add Mustard Seeds, Urad Dal and Curry Leaves, after splutter remove from fire and keep aside.
  • Then when all the steam has escaped, Open Pressure Cooker add tempered items and Jaggery, mix well and saute for few seconds and ready to serve.

Serving Suggestion : Serve hot with Hard Boiled Fried Egg or Taro Fry
