Ingredients :

Pumpkin / Parangikai / Manjal Poosanikai Poriyal

Pumpkin / Parangikai - 250 gm (finely chopped)
Onion - 1 no (chopped)
Green Chili - 2 nos (slit)
Coconut Shreds - 2 tbsp
Curry Leaves - 2 stks
Mustard Seeds -
Urad Dal / Black Gram (skinless) -
Oil - 1 tbsp
Water - 1/4 cup
Salt to taste.

Method :

Pumpkin / Parangikai / Manjal Poosanikai Poriyal

  • Heat Oil in a Kadai, first to temper add Mustard Seeds and Urad Dal, after splutter add Onion and Green chili, saute until light golden colour.
  • Then add Pumpkin / Parangikai, saute for 1 minute.
  •  Now add Water and required Salt, close the lid and cook for 5mins in medium flame.
  • Finally add Coconut Shreds and mix well and ready to serve.

Serving Suggestion : Serve hot with Drumstick Sambar or Village Sambar
