Rava / Sooji / Semolina - Kesari


Ingredients :

Rava / Sooji / Semolina - Kesari

Rava / Sooji / Semolina - 1 cup
Sugar - 1 cup
Cardamon - 3 nos (crushed or powder)
Cashewnuts - 20 nos
Food Colour - Yellow or Orange (any)
Ghee - 4 tbsp
Water - 2 and 1/2 cups

Method :

Rava / Sooji / Semolina - Kesari

  • First dry roast the rava / sooji in a kadhai \ pan until its colour changes to slightly brown and you can smell the aroma of rava and transfer to the plate.
  • Roast the cashew nuts with two tablespoon of ghee.
  • Then add the water and bring to boil. Stir in the food colour.
  • Add  in the roasted rava slowly and stir continuously without lumps. Cook until the water observed.

Rava / Sooji / Semolina - Kesari

  • Add in the sugar and cook until the sugar combined with the rava mixture.
  • Then add two tablespoon of ghee and mix well.
  • Finally add the cardamon, mix well and the kesari is ready to serve.
  • To make shapes, transfer the kesari mixture on the ghee greased plate, cool little and cut into desired shapes.

Serving Suggestion : Serve hot with Crispy Butter Murukku or Rice Flour Thattai
