Simple Vegetable Kurma (Mixed Vegetable Korma)


Simple Vegetable Kurma

Ingredients :

Simple Vegetable Kurma

Carrot - 1/4 cup (chopped 1")
Fresh Peas - 1/4 cup
Potato - 1/4 cup (chopped 1")
Beans - 1/4 cup (chopped 1")
Onion - 2 no (chopped)
Tomato - 3 nos (chopped)
Ginger & Garlic Paste - 1 and 1/2 tsp
Red Chili Powder - 1 tsp
Coriander Powder - 1 and 1/2 tsp
Bay Leaf - 1 no
Cinnamon Stick - 2 nos (2" long)
Cloves -2 nos
Cardamon - 2 nos
Fennel Seeds - 1/2 tsp
Fried Gram Flour / Udacha Kadalai Maavu - 2 tbsp
Coconut Paste - 3 tbsp
Coriander Leaves - 2 tbsp (chopped)
Curry Leaves - 1 stk
Oil - 2 tbsp
Water - 2 cup
Salt to taste.

Method :

Simple Vegetable Kurma

  • Heat Oil in a Pressure Cooker, roast Bay Leaf, Fennel Seeds, Cardamom and Cloves, then add Onion and Curry Leaves, saute until light golden colour.
  • Add Ginger & Garlic Paste, saute until raw smell leaves.
  • Add Tomato and saute for an minute.
  • Now add all Vegetables and saute for an minute.

Simple Vegetable Kurma

  • Add Red Chili Powder, Coriander Powder and Turmeric Powder, saute until raw smell leaves.
  • Then add Fried Gram Flour, Coconut Paste and required Salt, saute for few seconds.
  • Add Water, bring to boil, close the lid and cook for 1 whistle and 3mins in simmer.
  • When all the steam has escaped, open Pressure Cooker, mix well and ready to serve.

Simple Vegetable Kurma

Serving Suggestion : Serve hot with Poori and Chapati.
