Tamilnadu Parotta / Layered Parotta

Ingredients :

Maida / All Purpose Flour - 4 cup
Sugar - 1 tsp
Boiled Oil - 2 tbsp
Water -1 and 1/4 cup (+ or -)
Oil - 1/4 cup (+ or -)
Required Salt.

Method :

Tamilnadu Parotta / Layered Parotta

Steps to make Parotta Dough : (shown in above image)
  • In a mixing bowl, combine maida, sugar and salt.
  • Pour the boiling oil carefully and mix well.
  • Then make soft dough with required Water.
  • Pour 2 tbsp of oil over the dough and keep aside for 1 hour.

Steps to Make Parotta Layers : (shown in above image)
  • Divide the dough into 8 to 10 balls.
  • Apply a tsp of oil on the table and spread the dough as thin as possible using rolling pin and again apply 1 tsp of oil on the dough.
  • Now make layers like Saree Pleats.
  • Then hold both the ends, stretch it little and rotate into circle.
  • Finally use hand or rolling pin to spread the dough into little thick Parotta shape (circle).
  • Do the same for the rest of dough and keep aside.

Steps to Cook Parotta : (Use Iron Tawa)
  • Heat tawa without oil, then toast the parotta for half a min on both side.
  • Then pour a tsp of oil  and cook until golden brown colour on both side and ready to serve. Do the same for the rest.

Serving Suggestion : Serve hot with Chicken Saalna or Mutton Saalna or Vegetable Kurma.
