Drumstick Coconut Milk Curry | Murungakkai Paal Kuzhambu | Drumstick Curry


Ingredients :

Drumstick Coconut Milk Curry | Murungakkai Paal Kuzhambu | Drumstick Curry

Drumstick / Murungakkai - 2 nos (medium size, chop into 2" long)
Coconut Milk - 1 cup (thick)
Cashewnut - 30 nos (blanch in hot water for 30 mins)
Ginger - 1 tsp (finely chopped)
Garlic - 10 nos
Green chilli - 2 nos (slit)
Dry Red Chilli - 3 nos (slit)
Curry Leaves - 1 stk
Mustard Seeds - 1/4 tsp
Urad Dal - 1/4 tsp
Water - 1/2 cup
Oil - 1 tbsp
Salt to taste.

Method :

  • First Boil Drumstick with a cup of Water and cook for 7 to 10mins, keep aside.

  • In the meantime, grind Cashew-nuts (blanched) into fine paste with little coconut-milk and keep aside

  • Now heat Oil in a Kadai, temper Mustard Seeds and Urad Dal, after splutter, add Dry Red Chili, Garlic, Ginger, Green Chili and Curry Leaves, saute for an minute.
  • Then add Boiled Drumstick and required Salt, again saute for an minute.
  • Add Cashew-nut Paste, Coconut Milk and Water, bring to boil.

  • And cook for 3mins in simmer, stirring frequently and ready to serve.

Serving Suggestion : Serve hot with Hot and Crispy Taro Fry.
