Ingredients :

Boiled Egg - 4 no (De-shelled)
Onion - 1/2 no (chopped)
Tomato - 1 no (chopped)
Green Chili - 2 no
Mint Leaves - 20 leaves
Star Anise - 1 no
Cinnamon Stick - 2 no (2" long)
Cloves - 3 nos
Red Chili Powder - 1 tsp or 3/4 tsp
Coriander Seeds Powder - 1 no
Turmeric Powder - 1/4 tsp
Curry Leaves - 1 stk
Oil - 1 tbsp
Water - 1 and 1/2 cup
Salt to taste.

To Roast & Paste :

Shallots - 15 no
Garlic - 5 cloves
Poppy Seeds - 1 tsp
Cashew-nuts - 10 no
Grated Coconut - 2 tbsp
Green Chili - 2 no (slit)
Oil - 1 tsp

Method :

Steps to make paste :
  • Heat oil in a kadai, add shallots and green chili, saute til light golden colour.
  • Add poppy seeds and saute for few seconds.
  • Add coconut and cashew-nuts, saute for half a minute.
  • Remove from flame and allow to cool completely.
  • Then grind into fine paste with required water and keep aside.

Steps to make chettinad fried egg kurma :
  • Heat oil in a pan, roast star anise, cinnamon stick and cloves, add onion and curry leaves, saute until light golden brown colour.
  • Add tomato and green chili, saute until smash well.
  • Add mint leaves and saute for few seconds.

  • Add red chili powder, coriander seeds powder and turmeric powder, saute until raw smell leaves.
  • Add ground paste and saute for few seconds.
  • Add water and required salt, bring to boil, cover and cook for 5mins in simmer.

  • Meantime, fry boiled egg til light golden colour.
  • Add fried egg (slit it optional) into curry and again cook for 2min in simmer.
  • Ready to serve.

Serving Suggestion : Serve with white / brown Rice, Poori or Chapathi.
