Full Chicken Roast Pomegranate Molasses | Mulu Kozhi Roast Recipe

Chicken - 1 no (800gm to 1kg, Spatchcock)
Pomegranate Juice - 1/2 cup
Ginger - 2"
Garlic - 10 cloves
Dry Red Chili - 6 no (blanched)
Cumin Seeds Powder - 1 tsp
Pepper Powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Coriander Leaves - 1 tbsp
Hung Curd - 2 tbsp
Lemon Juice - 1 and 1/2 no
Sugar - 2 tsp
Oil - 1 tbsp
Salt To Taste. |
Steps To Make Chicken Roast :
- To make the masala paste, grind the ginger, garlic and blanched dry red chili into paste. (Image 1)
- Again grind into fine paste with curd and keep aside. (Image 2 and 3)

- To make the pomegranate molasses, combine the pomegranate juice, lemon juice and sugar together, cook over simmer and stirring frequently until the juice reduces into a syrup consistency. (Image 4 and 5)
- Cool the molasses completely.
- Mix with the ground paste and remaining ingredients (oil, turmeric powder, cumin seeds powder, pepper powder, required salt and coriander leaves). (Image 6 and 7)

- Then marinate the whole chicken with the prepared molasses-masala for overnight in a refrigerator. (Image 9 and 10)
- After marinate, bake the chicken for 15 to 20minutes on both sides or until cooks at preheated oven - 220 degree Celsius.

Serving Suggestion : Serve hot with Naan or Chappathi. |
