Mushroom Kodo Millet Pulav | காளான் வரகரிசிப் புலாவ் | Kaalan Varagu Arisi Pulao



Ingredients :

Mushroom Kodo Millet Pulav | காளான் வரகரிசிப் புலாவ் | Kaalan Varagu Arisi Pulao

Varagu Arisi \ Kodo Millet - 1 cup (washed, soaked 10minutes)
Cardamom - 2 + 2 pods
Cloves - 3 + 2 no
Cinnamon Stick - 2 + 1 no (2" long)
Bay Leaf - 1 no
Onion - 1 no (chopped)
Green Chili - 1 no (slit)
Ginger Garlic Paste - 1 tsp
Mint Leaves - 1 tbsp
Coriander Leaves - 1 tbsp
Coconut Milk - 1 cup (Thick)
Water - 1 cup
Ghee - 1 tbsp
Salt to Taste.

Method :

Steps To Make Mushroom Kodo Millet Pulav :
  • In a pressure cooker pan, add coconut milk, water, varagu arisi (kodo), cardamom (2), cloves (3), cinnamon stick (2), bay leaf and required salt, mix well and cook for 1 whistle and 3minutes in simmer. (Image 1)
  • When all the steam has escaped, open the pressure cooker pan and mix well without lumps and keep aside. (Image 2 and 3)

  • In a separate pan or kadai, ghee roast the cardamom (2), cinnamon stick (1) and cloves (2). (Image 4)
  • Add onion, green chili and curry leaves, saute till the onion becomes light brown colour. (Image 5)
  • Add ginger garlic paste and saute till its raw smell leaves. (Image 6)
  • Add mushroom, also reduce the flame into simmer and saute for about 4 to 5minutes or til the mushroom cooks well. (Image 7)

  • Add mint and coriander leaves, saute for few seconds and remove from the flame. (Image 8 and 9)
  • Finally add cooked varagu arisi (koda millet), mix well and ready to serve. (Image 10)

Serving Suggestion : Serve hot with Fried Eggs.
