ButterLess Strawberry Sponge Cake Valentine's Day Special Dessert

Yield: One 9" Cake |
Strawberry Puree - 1/4 cup
Maida \ All Purpose Flour - 1 cup
Milk - 1/2 cup
Sugar - 1/2 cup
Egg - 3 no
Baking Powder - 1/2 tsp
Cooking Soda - 1/4 tsp
Salt - 2 pinch
Lemon Rind - 1 tsp |
Preparation :
- Lightly grease the bottom of a 9" cake tin. Line the waxed paper in the bottom and set aside. (shown in above image)
- Sieve the flour, baking powder, cooking soda and salt together for 2 to 3 times and keep aside.
- Preheat the oven to 180 degree Celsius.

Steps To Make Strawberry Sponge Cake :
- Separate the egg yolks and whites.
- Beat the egg yolks with an electric mixer for 2 to 3minutes until they are pale yellow. (Image 1 and 2)
- Sprinkle on the sugar and continue beating for 5 minutes longer until the yolks becomes thick in texture and quite pale colour. (Image 2)
- Add strawberry puree and lemon rind, mix by spoon. (Image 3)
- Then gradually add the sieved flour mixture and milk and mix all together. (Image 4 and 5)

- Beat the egg whites till peaks but not dry. (Image 6)
- Stir 1/4 of the beaten egg whites into the batter to lighten it. (Image 7)
- Then gently fold in the balance egg whites. (Image 8)

- Pour the batter in to the prepared cake tin. (Image 9)
- Bake for 30 to 35minutes or until done.
- Test the cake by inserting a tooth pick or knife in the middle and it should comes out clean.
- Cool the cake in the tin for about 10mins. (Image 10)
- Turn out and remove the waxed paper (Image 11), cool completely, decorate with favorite icing and ready to serve.
