Ingredients :

Fresh Kasoori Methi \ Fenugreek Leaves \ Vendhayak Keerai Sambhar
Kasoori Methi \ Vendhaya Keerai - 1 cup
Toor Dal - 1/2 cup
Shallots - 1/2 cup + 1 tbsp
Tomatoes -3 no (chopped)
Coconut Paste - 1/4 cup
Red Chili Powder - 1 tsp
Coriander Seeds Powder - 1 and 1/2 tsp
Turmeric Powder - 1/4 tsp
Asafoetida - 1/4 tsp
Dry Red Chili - 2 no
Mustard Seeds - 1/4 tsp
Urad Dal - 1/4 tsp
Curry Leaves - 2 stk
Water - 1 and 1/2 cup + 1 cup
Oil - 1 tsp + 1 tbsp
Salt to Taste.
Method :

Steps To Make The Fresh Kasoori Methi \ Vendhaya Keerai Sambar :

  • In a pressure cooker pan, add the 1 and 1/2 cup of water, dal, turmeric powder, asafoetida and a teaspoon of oil, mix all and cook for 1 whistle and 2 minutes over simmer. (Image 1)
  • When all the steam has escaped then open the pressure cooker pan. (Image 2)
  • Add the red chili powder, coriander seeds powder and coconut paste, mix well. (Image 3)
  • Add the shallots, tomatoes, 1 cup of water and required salt, bring to boil. (Image 4 and 5)
  • Pressure cook for 1 whistle, then again when all the steam has escaped, open the pressure cooker pan and mix well. (Image 6)

  • Add the fresh kasoori methi leaves and mix well. (Image 7)
  • Bring to boil and cook for an minute. (Image 8)
  • Separately, temper the mustard seeds, urad dal and dry red chili, after splutter add finely chopped shallots and curry leaves, saute till the shallots becomes light brown colour. (Image 9)
  • Transfer the sambar into the tempered ingredients, mix well, remove from the flame before its boil and ready to serve. (Image 10)

Serving Suggestion :

Serve hot with White Rice and Potato Fry or Taro Fry.
