Chickpeas \ Kondakadalai - 1 cup
Onion Paste - 2 no
Tomato - 3 no
Ginger Garlic Paste - 1 tsp
Cumin Seeds - 1/2 tsp
Cloves - 3 no
Cardamom - 2 no
Cinnamon Stick - 2 no (2" long)
Bay leaf - 1 no
Red Chili Powder - 1 tsp
Coriander Seeds Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Cumin Seeds Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Dry Mango Powder - 1/2 tsp
Chole Masala Powder - 1 tbsp
Coriander Leaves - 1/4 cup (chopped)
Water - 1 cup + 1 cup
Salt to Taste. |
Steps To Make Chole Masala :
- Soak the chole \ chickpeas overnight and drain the water. (Image 1)
- Pressure cook the soaked chole with cloves, cardamom, cinnamon stick and cup of water for 1 whistle and 5minutes over simmer. (Image 2)
- When all the steam has escaped, open the open cooker pan and keep aside. (Image 3)

- Heat oil in a kadai \ frying pan and temper cumin seeds. (Image 4)
- After splutter add onion and saute till light golden brown colour. (Image 5)
- Add ginger garlic paste and saute till its raw smell leaves. (Image 6)
- Add tomato paste, saute and cook till the oil separates. (Image 7 and 8)

- Add all masala powder (red chili powder, turmeric powder, coriander seeds powder, cumin seeds powder, garam masala, dry mango powder and chole masala powder) and saute for half a minute. (Image 10)
- Add boiled chole with its stock and cup of water, mix all and bring to boil. (Image 11)
- Cook on simmer for about 2 to 3minutes, add coriander leaves, mix well, remove from the flame and ready to serve. (Image 12 and 13)

Serving Suggestion : Serve hot with Poori, Chapathi or Naan. |
