Ingredients :

Grated Pumpkin - 1 cup
Boiled Rice \ Pulungal Arisi - 1/2 cup
Raw Rice \ Pachai Arisi - 1/2 cup
Split Bengal Gram \ Kadalai Paruppu - 1/2 cup
Grated Coconut - 1/2 cup
Shallots - 1/2 cup (chopped)
Dry Red Chilli - 2 no
Fennel Seeds - 1 tbsp
Asafoetida - 1/4 tsp
Coriander Leaves - 1/4 cup (chopped)
Curry Leaves - 2 stk
Oil \ Ghee - required
Salt to Taste.

Preparation :

  • Soak both the rice with bengal gram \ kadalai paruppu and dry red chilli for 2 hrs. Then wash and drain the water. (shown in above image)

Steps To Make The Parangikai Adai Batter :

  • Grind the soaked ingredients (both rice, bengal gram and dry red chilli) for coarsely with required salt. (Image 1 and 2)
  • Add in the shallots, fennel seeds, curry leaves and asafoetida, then grind for few seconds till all combined. (Image 3 and 4)
  • To make the pumpkin adai batter, transfer the ground ingredients into a mixing bowl, add in the grated pumpkin, grated coconut and coriander leaves, mix well, if the batter is too thick, add some water and keep aside. (Image 5 and 6)

Steps To Make The Pumpkin Adai :

  • Heat a iron tawa or non stick tawa, pour a ladle full of prepared adai batter and spread into thin circle, then drop some oil around the edges and center. (Image 7 and 8)
  • Cook over low flame till golden brown colour on both sides. (Image 9)
  • Do the same for the remaining batter and serve hot.

Serving Suggestion : Serve hot with Coconut Chutney.
