Ingredients :

Peerkangai \ Ridge Gourd - 1 cup (skin off, de-seeded, 1/2" size)
Onion - 1 no (chopped)
Tomato - 1/2 no (chopped)
Ginger - 1/2 tsp (finely chopped)
Garlic - 1 tsp (finely chopped)
Red Chili Powder - 3/4 tsp
Turmeric Powder - 1/4 tsp
Cumin Seeds Powder - 1/2 tsp
Mustard Seeds - 1/4 tsp
Urad Dal - 1/4 tsp
Coriander Leaves - 1 tbsp (finely chopped)
Curry Leaves - 2 stk
Oil - 2 tbps
Cooked Rice - 1 and 1/2 cup
Salt to Taste.

Steps To Make The Peerkangai Saatham \ Ridge Gourd Rice :

  • Temper the mustard seeds and urad dal in hot oil in a kadhai \ pan, then add the onion and curry leaves, saute till the onion becomes translucent. (Image 1)
  • Stir in the tomato, ginger and garlic, until the tomato becomes soft. (Image 2)
  • Add in the peerkangai \ ridge gourd and saute for few seconds. (Image 3)
  • Add in the red chilli powder, cumin seeds powder and turmeric powder, saute for few seconds. (Image 4)

  • Pour 1/4 cup of water and add required salt, mix all and cook over simmer till the water reduced, then add the coriander leaves, mix well and remove from the flame. (Image 5 and 6)
  • Mix with the cooked rice and ready to serve. (Image 7 and 8)
