For Kofta :


Boiled Potato - 2 no (skin peeled off)
Boiled Corn - 1/2 cup
Panner - 1/2 cup
Green Chilli -1 no (finely chopped)
Coriander Leaves - 2 tbsp (finely chopped)
Lemon Juice - 1/2 no
Cornflour - 2 tbsp
Salt to Taste.

For Gravy :


Onion Paste - 2 no
Tomato Paste - 3 no
Cashew nuts Paste - 1/4 cup (blanched and paste)
Ginger Garlic Paste - 1 tsp
Cloves - 3 no
Star Anise - 1 no
Bay Leaf - 1 no
Cinnamon Stick - 2 no (2" long each)
Red Chilli Powder - 1 and 1/2 tsp
Cumin Seeds Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Water - 1 and 1/2 cup
Butter - 1 tbsp
Oil - 2 tbsp
Salt to Taste.

Steps To Make The Corn Paneer Kofta :

  • Grind the boiled corn coarsely. (Image 1)
  • To make kofta, combine the ground corn with mashed potato, crumbled paneer \ Indian cottage cheese, green chilli, coriander leaves, cornflour, lemon juice and required salt in a mixing bowl. (Image 2)
  • Knead into soft dough. (Image 3)
  • Make small balls out of the dough. (Image 4)
  • Deep fry the balls in the hot oil till golden brown colour and keep aside. (Image 5 and 6)

Steps To Make The Kofta Gravy :

  • Heat the oil and butter in a hot kadhai \ pan, roast the cloves, cinnamon stick and star anise. (Image 7)
  • Stir in the onion paste till its raw smell leaves, then add the ginger garlic paste and saute for few seconds. (Image 8)
  • Add in the tomato paste and saute till the oil separate from the mixture. (Image 9)
  • Then add the red chilli powder, cumin seeds powder, turmeric powder and required salt, saute for few seconds. (Image 10)

  • Add the cashew-nut paste, mix well. (Image 11)
  • Pour the water, bring to boil and cook for 2 to 3mins. (Image 12)
  • Then add the prepared kofta and bring to boil. (Image 13)
  • Add the coriander leaves, remove from the flame and ready to serve. (Image 14)
