Ingredients :

Mutton \ Meat - 500 gm
Basmathi Rice - 1 and 1/2 cup (soaked 15 mins) 
Shallots - 1/2 cup (chopped)
Ginger Garlic - 1 tbsp (crushed)
Green Chili - 5 to 6 no (slit)
Turmeric Powder - 1/2 tsp
Mint Leaves - 1/3 cup
Coriander Leaves - 1/3 cup
Curry Leaves - 2 stk
Curd - 1/2 cup
Cardamom - 3 no
Cloves - 5 no
Star Anise - 1 no
Cinnamon Stick - 3 no (2" long)
Bay Leaves - 2  no
Maratti Moggu - 1 no
Fennel Seeds - 1/2 tsp
Lemon Juice - 1 no
Ghee - 2 tbsp
Oil - 1 tbsp
Salt to Taste.

To Marinate :


Shallots - 1/4 cup
Green Chili - 2 no
Mint Leaves - 2 tbsp
Coriander Leaves - 2 tbsp
Curd - 1/4 cup
Salt to Taste.

Method :

Steps To Marinate The Mutton \ Meat :

  • To make marinate masala, grind the shallots with the green chili, coriander leaves and mint leaves. (Image 1 and 2)
  • Then marinate the mutton \ meat pieces with the ground paste with curd and required salt for half an hour. (Image 3 and 4)

Steps To Make The Mutton \ Meat Biryani :

  • Heat the ghee and oil in a hot pressure cooker pan, and roast the spices (cardamom, cloves, star anise, cinnamon stick, bay leaves, marathi moggu) and fennel seeds. (Image 5)
  • Add in the shallots, green chili and curry leaves, saute till the shallots becomes translucent. (Image 6)
  • Then stir in the ginger garlic till its raw smell leaves. (Image 7)
  • Add in the marinated mutton \ meat pieces and turmeric powder, and cook til the meat moisture reduced completely. (Image 8)
  • Pour the beaten curd and mix well. (Image 9 and 10)
  • Then cook for 1 whistle and 5 min over simmer.

  • When the steam released, open the pressure cooker pan. (Image 11)
  • Add in the coriander leaves and mint leaves, saute for few seconds. (Image 12)
  • Add in basmathi rice (soaked, drained), 1 and 1/2 cup of water and lemon juice, mix gently and bring to boil. (Image 13 and 14)
  • Again cook for 1 whistle and 3min over simmer.
  • Once the steam released, open the pressure cooker pan, mix gently and ready to serve. (Image 15 and 16)

Serving Suggestion : Serve hot with the hard boiled egg and onion raita.

Hi Kalai,
In this recipe you have mentioned 1 and 1/2 cup water for
1 and 1/2 cup rice. will it be enough to cook the rice?

Hi Maha mam, Actually 1\2 cup of curd is already used to pressure cook the mutton. After cooked it will not become dry. See the image 11. We have to calculate that also. So totally 2 cups (1 and 1\2 cup of water + 1\2 cup of curd). It is enough to cook the rice. For this measurement you get uthiri rice texture. If you not like uthiri texture means add extra 1\4 cup of water.
