Mushroom Brinji | Hot & Spicy Mushroom Rice | Easy Kaalan Biryani

Ingredients :

Mushroom Brinji
Mushroom - 200gm
Basmathi Rice - 1 and 1/2 cup (soaked 15 mins)
Onion - 2 no (chopped)
Tomato - 2 no (chopped)
Green Chilli - 3 no
Mint Leaves - 1/3 cup
Coriander Leaves - 1/3 cup
Curry Leaves - 2 stk
Red Chilli Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Ginger Garlic Paste - 1 tsp
Coconut Milk - 3 cup
Lemon juice - 1/2 no
Ghee - 2 tbsp
Oil - 1 tbsp
Salt To Taste.

 

Spices :


Cinnamon Stick - 1 no (3" long)
Cloves - 5 no
Star Anise - 1 no
Fennel Seeds - 1/2 tsp
Cardamom - 3 no
Bay leaf - 2 no

Method :
Mushroom Brinji

Steps To Make The Mushroom Brinji :

  • Heat the oil and ghee in a pressure cooker pan and roast the mentioned spices. (Image 1)
  • Stir in onion and curry leaves till the onion becomes translucent. (Image 2)
  • Add in the ginger garlic paste and saute till its raw smell leaves. (Image 3)
  • Add in the tomato and green chilli, saute till the tomato becomes tender. (Image 4)
  • Add in the red chilli powder, turmeric powder and required salt, saute till its raw smell leaves completely. (Image 5)
  • Then add the mushroom and saute till its moisture reduced completely. (Image 6)
Mushroom Brinji
  • Add in the mint leaves and coriander leaves, and saute for few seconds. (Image 7)
  • Then add in the basmathi rice (soaked, drained) and mix gently. (Image 8)
  • Pour the coconut milk and bring to boil, then add the lemon juice and mix little. (Image 9 and 10)
  • Close the lid, cook for 1 whistle and 3mins over simmer.
  • When all the steam has escaped, open the lid and mix gently, ready to serve. (Image 11 and 12)
Mushroom Brinji
Serving Suggestion : Serve hot with Hard Boiled Egg and Onion Raita.
