About The Recipe :

Usually the chicken or mutton meat masala dosai \ adai is prepared from the raw rice, but I have tried with the twist of little millet \ samai flour, it came out perfectly.

Ingredients :

Samai Dosai
Organic Whole Samai \ Little Millet - 1 cup (or Raw Rice)
Chicken or Mutton Shreds - 3/4 cup (boiled with salt)
Shallots - 1/2 cup (finely chopped)
Green Chilli - 2 no (finely chopped)
Garlic - 2 cloves (mashed)
Ginger - 1 inch (mashed)
Red Chilli Powder - 1 tsp
Cumin Seeds Powder - 1/2 tsp
Pepper Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Turmeric Powder - 1/4 tsp
Mint Leaves - 1/4 cup
Coriander Leaves - 1/4 cup (chopped)
Curry Leaves - 1 stk
Coconut Shreds - 1/4 cup
Gingelly Oil \ Ghee - required
Salt to Taste.

Method :

Steps To Make The Homemade Samai \ Little Millet Flour :

  • Wash and soak the samai \ little millet for half an hour. (Image 1)
  • Drain the water and dried for half an hour. (Image 2)
  • Then grind into fine powder. (Image 3)
  • Dry roast in a hot kadai til the nice aroma arise, remove from the flame and allow to cool, and ready to use. (Image 4)
  • Similarly you can make millets (foxtail, little, barnyard and koda) \ siru thaniyam (thinai, samai, kuthiraivali and varagu) flour easily at home.
  • Self life is around 3 to 4 months.

Steps To Make The Samai \ Little Millet Batter :

  • Transfer the prepared samai \ little millet flour in to a mixing bowl, mix with a cup of water (+ or -) and soak for 15mins. (Image 5)
  • Meantime lets make the chicken \ mutton masala mixture.

Steps To Make The Chicken \ Meat Mutton Masala Mixture :

  • Heat two tablespoon of oil in a kadhai \ pan, saute the shallots, green chilly and curry leaves, till the shallots becomes translucent, then add the ginger and garlic, saute til its raw smell leaves. (Image 6)
  • Add in the chicken or mutton shreds and saute for few seconds. (Image 7)
  • Then add the red chilli powder, cumin seeds powder, pepper powder, garam masala, turmeric powder and required salt, and mix well. (Image 8)
  • Sprinkle little water and cook til the masala raw smell leaves. (Image 9)
  • Add the mint leaves and coriander leaves, mix well and remove from the flame. (Image 10 and 11)
  • The chicken \ mutton masala mixture is ready.

Steps To Make The Samai Kari Dosai | Little Millet Chicken \ Meat Dosai :

  • To make dosai batter, mix the prepared chicken \ mutton masala mixture and coconut shreds with the soaked samai \ little millet batter. (Image 12 and 13)
  • To make dosai, heat a iron tawa, pour a ladle full of batter in the center and spread into circle for about 1/4 inch thickness and add required ghee or oil. (Image 14)
  • When the side turns brown, flip and cook til done. (Image 15)
  • Do the same for the remaining batter.

Serving Suggestion : Serve hot with any Mutton \ Meat Curry.
