Usually the Idly Dosai batter is made from the raw rice, boiled rice, urad dal and fenugreek, But for the thinai idly dosai batter, I have used only thinai arisi with urad dal and fenugreek. Thinai arisi \ Foxtail millet have more nutrition value than the usual rice. Its rich in dietary fiber, protein and also low in fat. Today learn how to make the thinai idly dosai batter preparation, fermentation and making process.

Ingredients :

Thinai batter
Thinai Arisi \ Foxtail Millet - 2 cup
Ulundu \ Urad Dal - 1/2 cup
Vendayam \ Fenugreek - 1 tsp
Rock Salt required

Method :

Steps To Make The Thinai Arisi \ Foxtail Millet Idly Dosai Batter :

  • Soak the thinai arisi \ foxtail milllet and urad dal separately in a bowl with enough water for 2hours. (Image 1)

  • To make the batter, drain the soaked urad dal and grind into fine paste with half cup of water for about 15 to 20mins. (Image 2 and 3)
  • Add in the drained thinai arisi and again grind into fine paste with a cup of water (+ or -) for about 10mins. (Image 4 and 6)
# Use wet grinder for best taste.

  • The thinai arisi \ foxtail millet idly \ dosai batter consistency is shown in the above image 7, Then add in the required salt and mix well.

  • Transfer the ground batter in to a bowl and set aside to ferment for 8 to 10 hours (use large bowl to ferment). (Image 8)
  • After ferment, the batter will rise well and you can see tiny bubbles. The ferment batter is shown in above image 9.
  • To make the idly or dosai, stir the batter and use.

Steps To Steam The Thinai Arisi \ Foxtail Millet Idly In a Idly Pan : (Above Image)

  • Heat 1 and 1/2 cm of water in the idly pan. (Image 1)
  • Meantime, Grease one or two idly plate with ghee or vegetable oil, or use wet cloth, Spoon the prepared batter into the all round indentations. (Image 2)
  • Arrange the prepared idly plate in the pan, cover the lid and steam for 12 to 15mins over medium flame.
  • To remove the idly from the cloth, pour little water around each idly and invert on the plate.
  • To remove the idly from the plate, use knife or large spatula to take out the idly. (Image 3 and 4)

Steps To Make The Thinai Arisi \ Foxtail Millet Dosai :

  • Heat a iron tawa, pour a ladle full of batter in the center, spread into thin circle and pour required oil around the dosai. (above image)
  • When the side turns brown colour, flip and cook till done. (above image)
  • Do the same for the remaining batter and ready to serve.
