Simple Sweet Layered Bun Made with Pearl and Finger Millet Recipe

Kelvaragu \ Ragi \ Finger Millet Flour - 1/4 cup
Kambu \ Pearl Millet Flour - 1/4 cup
Maida \ All Purpose Flour - 1/2 cup
Butter - 2 tbsp
Icing Sugar - 3 tbsp
Sugar - 1 tsp
Tutti Frutti - 3 tbsp
Cinnamon Powder - 1 tsp
Active Dry Yeast - 1 tsp
Water - 1/4 cup
Milk - required
Oil for grease
Salt - required |
Steps To Proofing The Active Dry Yeast :
- Take a 1/4 cup of warm water (105F to 110F). (Image 1)
- Add in the sugar and active dry yeast, and stir vigorously with a spoon till the yeast dissolved somewhat. (Image 2 and 3)
- Cover and set aside for 10 to 15mins, after that if the yeast mixture becomes foamy, it is ready to use. (Image 4)

Steps To Make The Millet Bun Dough :
- In a mixing bowl, combine the millets flour with maida, butter and a tablespoon of icing sugar. (Image 5)
- Then add the yeast mixture and knead into soft dough, if the dough is sticky, add some flour. (Image 6 and 7)
- Glaze some oil on the dough and cover with a wet cloth, and set in a warm place for 20 to 30mins or till its double in volume. (Image 8)
- After that push out all the air and divide the dough into two parts.

Steps To Make The Millets Bun :
- To shape the bun, roll out the one part of dough thinly into rectangle shape. (Image 9)
- Spread the icing sugar and cinnamon powder mixture. (Image 10)
- Then sprinkle the tutti frutti. (Image 11)
- Then roll it up lengthwise. (Image 12)

- Slit and split the roll vertically. (Image 13)
- Join the ends to form a circle and apply the milk wash on the roll. (Image 14)
- Do the same for the another part of dough.
- Grease the baking tray and place the prepared rolls on the tray, again cover with a wet cloth and set aside for 20mins to rise. (Image 15)
- Then bake for 25mins (+ or -) or until golden brown colour, in the pre-heated oven at 180 degree Celsius.
- Ready to serve.
