Simple Creamy Cauliflower and Potato Gravy - Pressure Cook Method

Potato - 1 cup (1/2 " long)
Cauliflower - 1 cup
Shallots - 1/2 cup (chopped)
Tomato - 2 no (chopped)
Cashew-nuts - 15 to 20 nos
Cloves - 3 no
Cinnamon Stick - 2 no (2" long)
Star Anise - 1 no
Red Chilli Powder - 1 and 1/2 tsp
Turmeric Powder - 1/4 tsp
Cumin Seeds Powder - 1/2 tsp
Water - 2 cups
Butter - 2 tbsp
Salt to Taste. |
Steps To Make The Potato Cauliflower Gravy :
- First grind the shallots, tomato and cashews into fine paste and keep aside. (Image 1 and 2)
- To make the gravy, heat butter in a pressure cooker pan and roast the cloves, cinnamon and star anise. (Image 3)
- Add in the ground shallots-tomato-cashews paste and saute til the butter is separate from the mixture. (Image 4)

- Add in the red chilli powder, turmeric powder, cumin seeds powder and curry leaves, and saute till its raw smell leaves. (Image 5)
- Stir in the potato and cauliflower for an minute. (Image 6)
- Add the water, mix well and bring to boil, close the lid, cook for 1 whistle and 3mins in simmer. (Image 7)
- When all the steam is released, open the pan, mix well and ready to serve. (Image 8)
