Healthy Oats Nuts And Dried Fruits Cookies -New Year Special 2015

Ingredients :

Cookies
Flour - 250 gm to 300 gm
Butter - 100 gm (chilled, cubed)
Cooking Soda - 1 tsp
Light Brown Sugar - 3/4 cup
Honey - 1 tbsp
Large Egg - 1 no
Vanilla Essence - 1 tsp
Oats - 1/4 cup
Salt - 2 pinch

Mixed Dry Fruits and Nuts : (roughly chopped)


Almond \ Badam - 1/4 cup
Cashew nuts - 1/4 cup
Pistachio - 1/4 cup
Raisins - 1/4 cup
Black Dates - 1/4 cup
Walnuts - 1/4 cup

Steps To Make The Oats And Nuts Cookies :

  • In a bowl, mix half the flour and butter with fingertips until it resembles fine crumbs. (Image 1 and 2)
  • Add the remaining flour, cooking soda, light brown sugar, honey, egg, vanilla essence and salt. (Image 3 and 4)

  • Then add the oats and mixed dry fruits and nuts, and mix well. If the dough is very stiff, add some milk. (Image 5 and 6)
  • Grease a baking tray, take a tablespoon of dough, roll in to circle and flatten it for 1/4inch thickness. (Image 7)
  • Bake for 8 to 10mins at 190 degree Celsius or until golden color. (Image 8)
  • Cool on wire rack and store in a air tight box.
