Delicious Prawn Dum Pulav | Eral Dum Pulao -Kalais Cooking Recipe

Ingredients :

Prawn Dum
Prawn - 500gm (de-shelled, deveined)
Basmathi Rice - 2 cups (soaked 15mins)
Cloves - 3 no
Cinnamon Stick - 2" long
Cardamom - 3 pods
Bay Leaf - 1 no
Cashew-nuts - 1/4 cup
Shallots - 1/4 cup (chopped)
Green Chilli - 2 no (slit)
Ginger - 1
Curd - 1/2 cup
Fresh Cream - 1/4 cup
Rose Water - 1 tsp
Mint Leaves - 15 no
Prawn Stock \ Water - 1/2 cup
Butter - 2 tbsp
Salt to Taste.

To Marinate :

Red Chilli Powder - 1 tsp
Cumin Seeds Powder - 1/2 tsp
Fennel Seeds Powder - 1/2 tsp
Pepper Powder - 1/2 tsp
Turmeric Powder - 1/4 tsp
Ginger Garlic Paste - 1 tsp
Corn Flour -1 tbsp
Egg White - 1 no
Lemon Juice - 1/2 no
Salt to Taste.

Method :
Prawn Dum

Steps To Make The Prawn Dum Pulav :

  • Boil 2 liters of water in a vessel, add the soaked rice, cloves, cinnamon stick, cardamoms, bay leaf, required salt and a tablespoon of oil. (Image 1)
  • Cook the rice until 2/3 done. (Image 2)
  • Drain the water, remove the spices and keep aside. (Image 3)
  • Then marinate the prawn with the mentioned ingredients for 15mins. (Image 4 and 5)
  • Shallow fry the marinated prawns until half done and keep aside. (Image 6)
Prawn Dum
  • To make the prawn dum pulav, roast the cashew-nuts in the prawn fried oil in a pan with butter and keep aside. (Image 7)
  • Add the shallots, green chilli and ginger, saute til the shallots turn light brown color. (Image 8)
  • Separately whisk the curd, cream, mint leaves, rose water, salt and prawn stock \ water. (Image 9)
  • Add the curd mixture into the pan, mix well and cook for 5mins or til its raw smell leaves. (Image 10)
  • Turn the flame into simmer.
Prawn Dum
  • Add half the fried prawn into the curd mixture and reserve half for later. (Image 11)
  • Then evenly spread the par-boiled rice on top of the curd mixture. (Image 12)
  • Place the remaining fried prawn and cashews on top of the rice. (Image 13)
  • Then place the banana leaf and cover the top with plate and also ensures the steam is not escape while cooking. Place the rice boiled water on the top. (Image 14)
  • Cook for 10mins (+ or -) and turn off the flame.
  • Take out the water, lid and banana leaf, mix gently and ready to serve. (Image 15)

Serving Suggestion : Serve hot with the Prawn Gravy.
