Muskmelon \ Mulam Pazham is a perfect summer fruit, this fruit is good for people who wants to reduce weight because it contain high in dietary fiber and low in calories, also helps to prevent heat related disorder. Today learn how to make the cake with the twist of mulam pazham, dates, almonds and raisins, and lemon frosting. You can follow the recipe as below...

Ingredients :

Cake
Honey Cantaloupe \ Muzham Pazham - 3/4 cup (grated)
Maida \ All Purpose Flour - 1 cup
Baking Powder - 1 tsp
Cooking Soda - 1/2 tsp
Cinnamon Powder - 1 tsp
Butter - 80 gm
Demerara Sugar - 1/3 cup
Egg - 2 nos
Crushed Almonds \ Badam - 3 tbsp
Raisins - 3 tbsp
Dates - 1/4 cup (de-seeded, chopped) + extra

For Lemon Frosting :


Icing Sugar - 1/2 cup
Lemon Juice - 1/2 no
Water - required

Method :
Cake

Preparation :

  • Pre-heat the oven at 180 degree Celsius.
  • Grease and dust the baking cake dish with butter and flour, and keep aside. (Image 1)
  • Sieve the flour with baking powder, cooking soda, pinch of salt and cinnamon powder for 2 to 3 times and keep aside. (Image 2)

Steps To Make Honey Cantaloupe Cake :

  • To make the cake batter, in a mixing bowl, add the melted butter, eggs and demerara sugar, beat with an electric beater for 2mins. (Image 3 and 4)
  • Gently stir in the honey cantaloupe \ muzham pazham, almond \ badam, raisins and dates. (Image 5)
  • Then fold in the prepared flour mixture and the batter is ready. (Image 6 and 7)
Cake
  • To bake, transfer the batter into the prepared cake baking dish evenly. (Image 8)
  • Bake for 25 to 30mins, until golden brown. (Image 9)
  • Test the cake by inserting a skewer in the middle and it should comes out clean.
  • Then leave the cake to cool in the pan for 10 to 15mins, turn out onto a wire rack and cool completely. 

Steps To Make The Lemon Frosting :

  • Combine the icing sugar and lemon juice in a bowl, add the required water and stir until smooth.
  • Then spread over the cake and decorate with dates. (Image 10)
