Ivy Gourd \ Kovakkai - 10 to 12 no (finely sliced)
Urad Dal - 2 tbsp + 1/2 tsp
Dry Red Chilli - 3 no
Asafoetida - 1/4 tsp
Garlic - 5 cloves
Coconut - 1/4 cup (chopped)
Tamarind - 1" ball size
Mustard Seeds - 1/4 tsp
Curry Leaves - 1 stk
Oil - 2 tbsp |
Steps To Make The Kovakkai \ Ivy Gourd Thuvaiyal :
- Saute the urad dal, dry red chilli and asafoetida in a teaspoon of oil till the urad dal turns golden color and keep aside. (Image 1)
- Similarly saute the coconut and garlic till they turns light golden color with a teaspoon of oil and keep aside. (Image 2)
- Then saute the kovakkai \ ivy gourd and tamarind, cook in its own moisture, keep aside and cool completely. (Image 3)
- To make the thuvaiyal, first grind the urad dal, asafoetida, dry red chilli, coconut and garlic coarsely. (Image 4)

- Then grind with the kovakkai into paste with required water. (Image 6)
- Separately temper the mustard seeds and urad dal in a teaspoon of hot oil, after splutter stir in the curry leaves and mix the tempered ingredients with the thuvaiyal mixture, ready to serve. (Image 7 and 8)
