Easy And Delicious Banana Muffins At Home | Vazhai Pazham Muffins

Morish Banana - 1 no
Unsalted Butter - 100 gm
Demerara Sugar - 1/2 cup
Egg - 2 no
Flour - 1 cup
Baking Powder - 1 tsp
Cooking Soda - 1/2 tsp |
Preparation :
- Sift the flour, baking powder and cooking soda for 2 to 3 times and keep aside.
- Grind the banana into smooth paste and keep aside.
Steps To Make The Banana Muffins :
- To make the banana sauce, heat and melt the butter in the kadhai \ pan, stir in the ground banana paste and cook for an minute over simmer. (Image 1)
- Stir in the demerara sugar and cook until the sugar melts completely. (Image 2)
- Stir in the cinnamon powder, then remove from the flame and cool completely. (Image 3)
- Once cooled, reserve the 6tbsp of sauce and transfer the remaining sauce into the mixing bowl.
- To make the banana muffins batter, blend the eggs in the prepared sauce, one at a time until just blended after each addition. (Image 4)

- Fold in the sifted flour mixture gently and the batter is ready. (Image 5 and 6)
- Fill the batter in the muffins moulds upto 3/4th volume. (Image 7)
- Bake in a pre-heated oven for 20mins (+ or -) at 180 degree Celsius. (Image 8)
- Test the muffins by inserting a tooth pick in the center, it should comes out clean.

- Then transfer the baked muffins into a plate, make a little silt in the center of each muffins and pour a tablespoon of reserved banana sauce, and ready to serve.
