Lotus Seeds - 2 heaped cups
Sugar - 1/4 cup
Fresh Cream - 1/4 cup
Cardamom Seeds Powder \ Dry Ginger Powder - 1/2 tsp |
Steps To Make The Caramel Lotus Seeds :
- To roast the lotus seeds, microwave the lotus seeds for 1 and 1/2 minutes (+ or - ), making sure that it doesn't get burnt but is well roasted and has a crisp texture or simply dry roast in the heavy bottom kadhai. (Image 1)

- To make the caramel sauce, sprinkle the sugar evenly in a pan and add a tablespoon of water in the center, cook over simmer until the sugar turns brown color. (Image 2 and 3)
- Then carefully stir in the fresh cream slowly and cook til sauce consistency. Add the cardamom powder and mix well. (Image 4 and 5)
- Remove the pan from the flame, mix with the roasted louts seeds and ready to serve.
