Lotus Seeds \ Nuts Almond Kheer | Thamarai Vidhai Badam Payasam !

Lotus Seeds \ Thamarai Vidhai - 1 and 1/2 cups
Badam \ Almond - 50 gm
Milk - 1 liter + extra
Demerara Sugar - 1/4 cup (+ or -)
Cardamom - 3 no
Ghee \ Butter - 2 tbsp |
Steps To Make The Lotus Seeds Badam Kheer :
- To make the almond \ badam paste, soak the badam in the hot water for an hour, drain the water and cool completely. (Image 1)
- Then de-skin the badam and grind into smooth paste with required milk or water, keep aside. (Image 2)
- To roast the lotus seeds \ thamarai vidhai, heat the ghee in a heavy bottom kadhai and roast the lotus seeds over simmer till light golden color and crisp, by stirring continuously. (approximately 2 and 1/2 minutes) (Image 3)
- Then break the roasted lotus seeds into small pieces and keep aside. (Image 4)

- To make the payasam \ kheer, heat the milk in a heavy bottom kadhai, bring to boil, then add in the prepared badam paste, mix well and cook for 5minutes or till little thick, also making sure that the milk mixture doesn't get burnt at the bottom. (Image 5)
- Stir in the sugar and again cook for 5minutes more. (Image 6)
- Add in the roasted-breaked lotus seeds, mix well and cook for an minute. (Image 7)
- Finally add the crushed cardamom, mix all, remove from the flame and ready to serve. (Image 8)
