Caramelized Mango Up Side Down Pearl Millet Cake -Easy Kambu Cake

Large Mango - 1 no (skin peeled)
Sugar - 3/4 cup
Kambu Maavu \ Bajra \ Pearl Millet Flour - 2 cup + 1 tbsp
Baking Powder - 1 and 1/2 tsp
Cooking Soda - 3/4 tsp
Butter - 120 gm + 1 tsp
Demerara Sugar - 1 cup
Large Egg - 4 no
Mango Essence - 1 tsp |
Steps To Make The Mango Up Side Down Millet Cake :
- Slice half of the mango and dice the remaining mango.
- Grease and dust the 12 inch baking cake dish and set aside. (Image 1)
- Shift the flour, baking powder and cooking soda for 2 to 3 times and keep aside. (Image 2)
- To caramelize the sugar, heat the white sugar and a table of water till brown color and charred. (Image 3)
- Meantime arrange the half of the mango slices in the prepared cake dish, then pour the caramelized sugar over the mango slices and cool completely. (Image 4)
- Pre-heat the oven at 180 degree Celsius.
- To make the cake batter, beat the butter and demerara sugar till light and creamy in a mixing bowl, using electric beater. (Image 5)
- Add the eggs, one at a time, beating until just blended after each addition. (Image 6)

- Then add the mango essence and beat till combined. (Image 7)
- Fold in the prepared flour mixture, if the batter is too thick add some milk. (Image 8)
- Stir in the remaining mango pieces and the batter is ready. (Image 9 and 10)
- Transfer the batter in to the prepared cake dish. (Image 11)
- Bake for 40 to 45 mins or till brown color. (Image 12)

- Test the cake by inserting a tooth pick in the center and it should comes out clean.
- Cool the cake for 10mins, turn out the cake and serve.
