Kambu Siru Thaniyam | Bajra | Pearl Millet Chocolate Cake Ganache

Ingredients :

Millet Cake
Kambu Siru Thaniyam maavu \ Bajra \ Pearl Millet Flour - 1 and 1/2 cup
Cocoa Powder - 1/2 cup
Baking Powder - 1 and 1/2 tsp
Cooking Soda - 3/4 tsp
Unsalted Butter - 160 gm (room temperature)
Powdered Sugar - 1 cup
Large Eggs - 4 no (room temperature)
Vanilla Essence - 1 tsp

Method :
Millet Cake

Steps To Make The Kambu Siru Thaniyam \ Bajra \ Pearl Millet - Chocolate Cake :

  • Grease and dust the 12inch cake dish with butter and kambu flour, keep aside. (Image 1)
  • Sieve the kambu flour with cocoa powder, baking powder and cooking soda for 2 to 3 times and keep aside. (Image 2)

  • To make the cake batter, beat the butter and powdered sugar until light and fluffy. (Image 3)
  • Beat in the eggs, one at a time until blended after each addition. (Image 4)
  • Beat in the vanilla essence until just blended. (Image 5)
  • Gently fold in the sieved flour mixture and the batter is ready. If the batter is too thick, add some milk. (Image 6 and 7)
Millet Cake
  • Transfer the cake batter into the prepared cake dish. (Image 8)
  • Bake in the pre-heated oven for 40 to 45 minutes at 180 degree Celsius.
  • Test the cake by inserting a tooth-pick in the center, it should comes out clean. (Image 9)
  • Cool the cake in the pan for 10mins, then invert the cake on wire rack and cool completely. (Image 10)

Meantime, To Make The Chocolate Ganache - Ingredients :


Unsalted Butter - 100 gm
Cocoa Powder - 1/3 cup
Fresh Cream - 3/4 cup
Demerara Sugar or White Sugar - 1 cup
Vanilla Essence - 1 tsp

Steps To Make The Chocolate Ganache :

  • Melt the butter in a pan, then remove from the flame. (Image 11)
  • And stir in the cocoa powder without lumps. (Image 12)
  • Then add in the cream, sugar and essence, then heat and cook till sauce consistency. (Image 13 and 14)
  • And cool the sauce, once cooled the sauce turns thick and easy to spread on cake.

Steps To Layer The Cake With Chocolate Ganache :

  • To make the sugar water, mix the 1/4 cup of sugar and 3/4 cup of water and keep aside.
  • Slice the prepared cake into two layer. (Image 15)
  • Then brush the cake layers with required sugar water evenly. (Image 16)
  • Spread the prepared chocolate ganache on top and place the another layer, the spread the remaining ganache and cover the sides. (Image 16 and 17)
  • Decorate with candies and ready for party. (Image 18)
