About The Recipe:

Kambu Millet doughnuts \ donuts :  ( kambu siru thaniyam in tamil, bajra in hindi and pearl millet in english. )

It is a great source of protein and fiber, so its easily digestible. Also, its rich in potassium, magnesium, copper, iron and many more.,

In India, it is consumed in the form of kool, rice and chappati. we can also use this nutritious flour in cookies and cakes.

I have already posted doughnut recipe without yeast, so I have tried with yeast, it came out perfectly and delicious taste. It's very healthy and easy to bake at home, made with wheat flour, yeast and simple ingredients, and glazed with chocolate. You can follow my recipe below.,

Ingredients :

Kambu Maavu \ Bajra \ Pearl Millet Flour - 3/4 cup
Wheat Flour or Maida \ All Purpose Flour - 1/4 cup
Active Dry Yeast - 1 tsp
Sugar - 1 tsp
Oil - 1 tsp + extra
Melted Milk or Dark or White Chocolate - 1 cup

Method :

Steps To Make The Kambu \ Bajra \ Pearl Millet Donut :

  • To activate the yeast, dissolve the yeast and sugar in a 1/4 cup of lukewarm water (105 F to 115 F). Wrap with cling film and set for 10 to 15mins, After that, if the yeast has become foamy, its ready to use. (Image 1)
  • To make the donut \ doughnut dough, mix the kambu, wheat flour, oil, yeast mixture and generous pinch of salt, knead into very soft dough with required water. (Image 2 and 3)
  • Place the prepared dough in a oil greased bowl, wrap with cling film and set in a warm place for about 30minutes or til double the volume. (Image 3 and 4)
  • Roll out the dough into 1/2inch thickness, cut into doughnut shape using cutter. (Image 5)
  • Grease the baking dish tray, place the doughnut and set in a warm place until double the volume. (Image 6)
  • Deep fry the doughnuts in a small batches until golden brown color. (Image 7)
  • Or to bake, brush milk on top and bake in the pre-heated oven at 200 degree Celsius for 12 to 15 minutes at high rack or till golden color. Image 8)
  • Then glaze with the melted chocolate while hot and ready to serve.
