Homemade Delicious Badam And Lotus Seeds Kulfi | Indian Ice Cream

About the Recipe - Homemade Delicious Almond and Lotus Seeds Kulfi :


Kulfi is a very popular dessert in India, also one of the traditional dessert. It is a frozen dairy dessert like ice cream. Its main ingredient is malai \ milk and the most common flavors are mango, cardamom, almonds, pistachio and saffron. Now a days kulfi comes in a fruit variations like orange, strawberry, chikoo, avocada and many more. Everyone can easily make at home, if they have milk and nuts (like badam, lotus, pista). I have tried the combination of badam and lotus seeds, it came out perfectly with the twist of demerara sugar. You can follow my recipe as below.

Ingredients :

Almonds \ Badams - 50 gm
Lotus Seeds \ Thamarai Vidai - 1 cup
Milk - 1 liter + extra
Saffron - 1/2 tsp
Demerara Sugar - 3/4 cup
Cornflour - 1 tbsp

Method :

Preparation : (To make the almonds \ badam's paste)

  • Soak the almond in hot water for an hour, then peel off the outer skin. (Image 1 and 2)
  • Then grind the almond into fine paste with required milk and keep aside. (Image 3 and 4)

Steps To Make The Almond And Lotus Seeds Kulfi :

  • In a heavy bottom kadhai, boil the milk. (Image 5)
  • Add in the prepared almond paste, mix well and turn the flame into simmer. (Image 6)
  • Add in the crushed saffron and cook for about 5mins. (Image 7)
  • Add in the demerara sugar and cook till its dissolved completely. (Image 8)

  • Meantime, microwave the lotus seeds for an minute and break into tiny pieces, keep aside. (Image 9 and 10)

  • Separately mix the cornflour with 2 to 3 tbsp of water. (Image 11)
  • Mix the cornflour water into badam-milk mixture, mix well and cook for about 3mins or till the mixture turns semi-liquid consistency. (Image 12)
  • Finally stir the crushed lotus seeds and remove from the flame. (Image 13)
  • Then cool the kulfi mixture completely. (Image 14)

  • Fill the kulfi molds and freeze for 6 hours (+ or -) or overnight. (Image 15)
  • To demolds the kulfi's, insert the bamboo stick in to the center of each kulfi. Then carefully run a knife around the kulfi or rub the molds between your palms and pull out the stick. (Image 16)
  • Serve immediately.
