About The Recipe - Homemade Egg Noodles And Tomato Paneer Sauce :
Today learn how to make the homemade egg noodles freshly at home without paste machine. Truly homemade noodles take some time to make. But the making process is very easy. All you needs flour, egg and salt. Just make the dough, knead well, roll out, cut into strips, cook and toss with your favorite sauce made with chicken, meat or vegetable. For Homemade Egg Noodles :
Maida \ All Purpose Flour - 2 and 1/2 cups + extra
Egg - 2 nos
Salt To Taste. |
For Paneer And Tomato Sauce :
Homemade Paneer \ Indian Cottage Cheese - 200 gm
Tomato - 2 no
Onion - 1 no
Dry Red Chilli - 3 no
Garlic - 4 cloves
Garam Masala - 1 tsp
Tomato Ketchup - 3 tbsp
Coriander Leaves - 2 tbsp
Butter - 2 tbsp
Salt to Taste. |
Steps To Make The Homemade Fresh Egg Noodles :
- To make the fresh egg noodles dough, in a mixing bowl, combine the maida \ all purpose flour and required salt. Then crack the eggs into the center and knead into soft dough, if the dough is too sticky add some more flour and knead well. Cover and rest the dough for about 15mins. (Image 1 and 2)

- After 15mins, knead the dough on a flat surface for 10mins until you achieve very smooth and elastic consistency. (Image 3)
- Divide the dough into three to four parts, on a floured surface, roll out the each dough as thinly as possible using flour. Leave the rolled dough uncovered for about 20mins to half an hour (to cut easily). Then cut into thin strips or roll the dough loosely and cut it. Dust the noodles and keep aside. (Image 4 and 5)
To Store : Dry the prepared noodles and store in a refrigerator for 2 to 3 days. |
- To cook the noodles, heat the required water in a kadhai \ pan with a tablespoon of oil and a teaspoon of salt. Bring to boil. (Image 6)
- Then add in the prepared noodles, bring to boil, then lower the flame into medium and cook uncovered for 4 to 5mins or until done. (Image 7 and 8)
- Drain the noodles and ready to use. (Image 9)

Steps To Make The Simple Tomato and Paneer Sauce :
- Blanch the tomatoes, onion and dry red chili. Drain the water and cool them completely. Then grind into fine paste and keep aside. (Image 10, 11 and 12)

- To make the sauce, melt the butter in the hot kadhai \ pan and stir in the garlic. (Image 13)
- Stir in the ground tomato mixture and cook till its moisture reduced. (Image 14)
- Then add in the tomato ketchup and garam masala, mix well. (Image 15)
- Add half a cup of water and the paneer pieces and cook for an minute. (Image 16)
- Stir in the coriander leaves and the sauce is ready. (Image 17)

- Add in the cooked noodles, mix gently and ready to serve. (Image 18 and 19)
