ATTU KAL KUZHAMBU | MUTTON LEG \ GOAT LEG CURRY with freshly roasted masala in a easy pressure cooking method with step by step instruction and images.

Ingredients :

Attu kal curry
Attukal \ Mutton Leg - 1 set ( cleaned, washed )
Cumin Seeds - 1 tsp
Fennel Seeds - 1/2 tsp
Pepper - 1 tsp
Dry Red Chili - 4 no
Coconut - 1/4 cup
Cloves - 3 no
Cinnamon Stick - 2" long
Shallots \ Sambar Onion - 1/2 cup (chopped)
Curry Leaves - 2 stk
Tomato - 1 no (chopped)
Green Chili - 3 no
Coriander Leaves - 3 tbsp
Oil - 1 tsp + 2 tbsp
Salt to Taste.

Method :

Steps To Make The Attu Kal Kuzhambu \ Mutton Leg Curry :

  • First pressure cook the attu kal with two cups of water for 1 whistle and 30minutes over simmer.
  • When all the steam has escaped, open the pan and keep aside. (Image 1)

  • To make the roasted masala, heat a teaspoon of oil in a kadhai, add in the cumin seeds, fennel seeds, pepper and dry red chili. (Image 2)
  • Cool the roasted ingredients and grind them into power, then add in coconut and again grind into fine paste with required water. (Image 3, 4 and 5)
  • Keep aside the masala.
Attu kal curry
  • To make the curry, heat oil in a pressure cooker pan, roast the cloves and cinnamon stick. (Image 6)
  • Add in the shallots and curry, saute until the shallots turn light brown colour. (Image 7)
  • Add in the tomato and green chili, saute until the tomato turns tender. (Image 8)

  • Stir in the prepared roasted masala paste for few seconds. (Image 9)
  • Add in a cup of water or required water, mix well and bring to boil. (Image 10)
  • Now add in the pressure cooked attu kal and required salt. Mix well and again cook for 1 whistle. When all the steam has released, open the pan, stir in the coriander leaves and ready to serve. (Image 11 and 12)
Attu kal curry
Serving Suggestion : Serve hot with mutton sukka.
