Ingredients :

Butter Beans - 1 cup
Cashews - 15 to 20 no (blanched)
Cinnamon Stick - 2" long
Cloves - 3 no
Star Anise - 1 no
Shallots - 1/2 cup ( chopped)
Crushed Ginger Garlic - 1 tbsp
Tomato - 1 no (chopped)
Red Chili Powder - 1 tsp
Cumin Seeds Powder - 1/2 tsp
Fennel Seeds Powder - 1/2 tsp
Turmeric Powder - 1/4 tsp
Coriander Leaves - 2 tbsp (chopped)
Curry Leaves  - 1 stk
Oil - 2 tbsp
Salt to taste.

Method :

Steps To Make The Butter Beans Cashew Gravy :

  • First grind the blanched cashews into fine paste with required water and keep aside. (Image 1 and 2)

  • To make the gravy, heat oil in a pressure cooker pan and roast the cinnamon stick, cloves and star anise. (Image 3)
  • Add in the onion and cook till the onion turns golden colour. (Image 4)
  • Stir in the ginger garlic paste till its raw smell leaves completely. (Image 5)
  • Add in the tomato and curry leaves, cook till the tomato becomes tender. (Image 6)

  • Add in the red chili powder, cumin seeds powder, fennel seeds powder and turmeric powder, stir for few seconds. (Image 7)
  • Stir in the butter beans for few seconds. (Image 8)
  • Add in the prepared cashew paste and mix well. (Image 9)
  • Add one and half cup of water (+ or -) and mix well. Then the required salt and bring to boil. (Image 10)
  • Close the lid and pressure cook for one whistle and three minutes to five minutes over simmer. When all the steam has released, open the pan, add in the coriander leaves, mix well and ready to serve. (Image 11 and 12)
