Special Chettinadu Kadhai Chicken Masala | Kozhi Kari Vathakkal, its definitely hot and spicy, is made from the freshly roasted Indian spices like kalpasi, cinnamon stick, cloves, coriander seeds, fennel seeds, cumin seeds, dry red chili along with simple ingredients and cooked in a kadhai \ pan with gingelly oil. Follow the recipe as below...

Ingredients :

Chicken Pieces - 350 gm
Kalpasi - 1 tsp
Cinnamon Stick - 2" long + 2" long
Cloves - 3no + 2 no
Coriander Seeds - 1 tbsp
Pepper - 1 and 1/2 tsp
Cumin Seeds - 1 tsp
Fennel Seeds - 1 tsp
Dry Red Chili - 3 no
Ginger - 1"
Garlic - 5 cloves
Coconut - 2 tbsp
Tamarind Ball - 1/2" ball size
Turmeric Powder - 1/4 tsp
Coriander Leaves - 2 tbsp
Rock Salt - required
Gingelly Oil - 2 tbsp

Method :

Steps To Make The Chettinadu Kadhai Chicken Masala :

  • To make the Chettinadu chicken masala, dry roast the kalpasi, cinnamon and cloves in the hot kadhai \ pan. (Image 1)
  • Stir in the coriander seeds, pepper, cumin seeds, fennel seeds and dry red chili until the spices turns golden colour. (Image 2)
  • Add in the ginger, garlic, coconut and tamarind ball, saute till the coconut aroma rise well and cool the roasted masala completely. (Image 3 and 4)
  • Then grind the cooled masala into fine paste with required water and salt, now the freshly roasted Chettinadu masala is ready to marinate the chicken pieces. (Image 5 and 6)

  • To marinate, mix the chicken pieces with the prepared Chettinadu chicken masala and turmeric powder in a mixing bowl. And marinate for about thirty minutes. (Image 7 and 8)

  • To make the Chettinadu kadhai chicken masala, heat the gingelly oil in a hot kadhai \ pan, roast the cinnamon stick and cloves. (Image 9)
  • Add in the marinated chicken and cook for about twenty to twenty five minutes over medium flame. Also sprinkle some water in between to avoid burnt at the bottom. (Image 10 and 11)
  • Finally add the coriander leaves, mix well and ready to serve. (Image 12)

Serving Suggestion: Serve hot with the rasam rice, curd rice or biryani.
