Ingredients :

Thinai Arisi | Foxtail Millet - 1 cup
Mulaikattiya Pasi Payaru | Sprouted Green Gram - 3/4 cup
Green Chili - 2 no
Asafoetida - 1/4 tsp
Salt To Taste.

Method :

Steps To Make The Thinai Arisi And Mulaikattiya Pasi Payaru Dosai :

  • Wash and soak the thinai arisi for about two hours. (Image 1)

  • To make the dosai batter, grind the soaked thinai arisi, sprouted pasi payaru, green chili, asafoetida and required salt into fine paste with required water. (Image 2 and 3)
  • Transfer the ground dosai batter into a bowl, it consistency is little watery than the usual dosai batter, so mix with required water and the batter is ready to make dosai. (Image 4)

  • To make the dosai, heat the iron tawa, lower the flame into simmer, pour a ladle full of batter in the center or required batter. (Image 5)
  • Spread into thin circle using ladle and turn the flame into high. (Image 6)
  • Add a teaspoon of oil and cook. (Image 7)
  • When the side turns golden colour, turn and cook over simmer, until the brown spots appear. (Image 9)
  • Do the same for the remaining batter and ready to serve.

Serving Suggestion : Serve the dosai hot with coconut chutney and tomato chutney.
