Ingredients :

Pineapple Chicken Egg Rice
Pineapple - 1 cup (chopped)
Pineapple Paste \ Puree - 1 cup
Chicken - 1 cup (boneless, 1" size)
Egg - 3 no (optional)
Basmathi Rice - 1 and 1/2 cup
Cashews - 10 to 15 no
Green Chili - 2 no (finely chopped)
Ginger - 1 tbsp (finely chopped)
Garlic - 1 tbsp (finely chopped)
Spring Onion - 2 no (finely chopped)
Butter - 3 tbsp
Salt to Taste.

Method :
Pineapple Chicken Egg Rice

Steps To Make The Pineapple Chicken Egg Rice Recipe :

  • Wash and soak the basmathi rice for about fifteen minutes.
  • Then pressure cook the basmathi rice with 2 and 1\4 cup of water and required salt for one whistle and five minutes over simmer. When all the steam has escaped, open the pan and keep aside. (Image 1 and 2)

  • Meanwhile to make the pineapple-chicken-egg mixture, heat a tablespoon of butter or ghee in a hot kadhai, roast the cashews and transfer to a plate. (Image 3)
  • In the same kadhai, again heat a tablespoon of butter, stir in the pineapple pieces and cook till soft, then transfer into same plate. (Image 4)
  • In the same kadhai, heat the remaining butter or ghee and stir in the green chilies. (Image 5)
  • Stir in the ginger and garlic until its raw smell leaves. (Image 6)
  • Add in the spring-onion's onion and saute till its turn slightly golden colour. (Image 7)
  • Add in the chicken pieces and cook for an minute. (Image 8)

  • Now add in the pineapple paste \ puree and cook the chicken fully. (Image 9)
  • Make a well in the center, break the eggs in the center and make crumbled egg, also making sure that it doesn't get burnt at the bottom. (Image 10 and 11)
  • Add the pressure cooked basmathi rice and mix well without lumps. (Image 12)
  • Finally add the sauteed pineapple, roasted cashews and spring-onion's greens, mix well and ready to serve.
