Ingredients :

Unsweetened Khoya - 1\2 cup
Maida | All Purpose Flour - 1\2 cup
Warm Milk - 1 cup (+ or -)
Yellow Food Colour - 2 pinch
Sugar - 2 cups
Water - 1 cup
Cardamom Powder - 1\2 tsp + 1\2 tsp
Sliced Almonds | Badam - required
Salt - pinch
Oil for Deep Fry.

Method :

Steps To Make The Malpua Recipe:

  • To make the malpua batter, In a mixing bowl whisk the unsweetened khoya and 1\2cup of warm milk without lumps. (Image 1)
  • Add in the maida, cardamom powder and pinch of salt, again whisk without lumps with required milk. The batter consistency is pour-able, it should be too thick and too thin. (Image 2)
  • Add in the yellow food colour, mix well and set the malpua batter for about 1 and 1\2 hour. (Image 3 and 4)

  • To make the sugar syrup, heat the sugar and water together. Bring to boil, mix the cardamom powder and keep aside. (Image 5)
  • To make the malpua, heat enough oil to deep fry, turn the flame into simmer, then using ladle, take some batter and drop them in the hot oil, it spread into thin circle, cook on both sides till golden colour. (Image 6 and 7)

Note: If the malpua batter is not spread into thin circle and becomes fluffy like bonda means add some milk and mix well else add some maida.

  • Place the fried malpua on the tissue paper to absorb the excess oil and cool them little. (Image 8)
  • Then immerse in the sugar syrup for few minutes till the malpua absorb the syrup, transfer into the serving plate and serve with rabdi and sliced almonds. (Image 9 and 10)
  • Do the same for the remaining.

Serving Suggestion: Serve the malpua with the crunchy butter murukku.
