Ingredients :

Thamarai Vithai | Phool Makahana | Lotus Seeds - 1 heaped cup
Cashews - 1\4 cup
Large Tomato - 2 no
Large Onion - 1 no
Ginger - 1 "
Garlic - 3 to 4 cloves
Cinnamon Stick - 2" long
Cloves - 3 no
Bay Leaf - 1 no
Red Chili Powder - 1 tsp
Cumin Seeds Powder - 1 tsp
Turmeric Powder - 1\4 tsp
Coriander Leaves - 2 tbsp (chopped)
Butter - 1 tbsp + 2 tbsp
Salt to Taste.

Steps To Blanch The Tomatoes & Cashews :

  • To blanch the tomatoes, boil two cup of water, then using knife, make an cross cut ( ie., X ) on the bottom of tomatoes, add the tomatoes into the boiling water and cook for about five minutes over simmer. Then transfer them to a bowl of cold water. Cool little and peel off the skin and ready to use. (Image 1) 
  • Similarly to blanch the cashews, cook the cashews in the boiling water for about five minutes over simmer, then transfer them to a bowl of cold water and keep aside. (Image 2)

Steps To Make The Thamarai Vithai | Phool Makahana | Lotus Seeds Cashews Gravy

  • Preparation, grind the onion, ginger and garlic into coarsely and keep aside. (Image 3 and 4)
  • Then grind the blanched tomatoes and cashews separately and keep aside. (Image 5 and 6)

  • To roast the lotus seeds, heat a tablespoon of butter in a kadhai, lower the flame into simmer and saute the lotus seeds for about one and half minutes or until crunchy and keep aside. (Image 7)

  • To make the gravy, heat the remaining butter in a hot kadhai, add in the ground onion mixture and saute till its raw smell leaves. (Image 8)
  • Add in the cinnamon stick, cloves and bay leaf, cook for an minute. (Image 9)
  • Add in the blanched tomatoes paste and cook for an minute or until its moisture reduced. (Image 10)
  • Stir in the red chili powder, cumin seeds powder, turmeric powder for few seconds. (Image 11)

  • Add in the blanched cashews paste and mix well. (Image 12)
  • Add one and half cup of water, bring to boil and cook for about five minutes, also stir in between. (Image 13)
  • Then add the roasted lotus seeds, mix well and cook for an minutes. (Image 14)
  • Finally add the coriander leaves, mix well and ready to serve. (15)
