Ingredients :

Seeraga Samba Arisi - 2 cup
Mutton | Goat Meat - 1/2 kg
Ginger - 1 inch
Garlic - 10 cloves
Green Chili - 2 nos + 5 nos
Onion - 1/2 no + 1 and 1/2 no (sliced)
Cinnamon Stick - 2" long
Cloves - 5 nos
Cardamom - 3 nos
Star Anise - 1 nos
Bay Leaf - 2 nos
Fennel Seeds - 1 tsp
Tomato - 2 no (medium size, chopped)
Red Chili Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Coconut Milk - 4 cup  ( 1/4 coconut )
Mint Leaves - 2 tbsp + 1/4 cup
Coriander Leaves - 1 tbsp + 1/4 cup (chopped)
Curry Leaves - 2 stk
Ghee - 3 tbsp
Salt to Taste.

Steps To Make The Seeraga Samba Arisi Mutton Biryani Recipe:

  • First grind the ginger, garlic, green chili, half onion, two tablespoon of mint leaves and two tablespoon of coriander leaves into paste and keep aside. (Image 1 and 2)

  • To make the biryani, heat the ghee in a pressure cooker pan and then roast the cinnamon stick, cloves, cardamom, star anise, bay leaf and fennel seeds. (Image 3)
  • Add in the onion and curry leaves, saute till the onion turns light brown colour. (Image 4)
  • Stir in the ground onion paste mixture for few seconds. (Image 5)
  • Add in the tomato, green chili and little salt, cook till the tomato turns tender. (Image 6)

  • Add in the mutton pieces and saute till its moisture reduced. (Image 7)
  • Stir in the red chili powder, turmeric powder and required salt for few seconds. (Image 8)
  • Add a cup of coconut milk, mix well and bring to boil. Cover and cook for 1 whistle and 15mins over simmer. (Image 9 and 10)

  • Meantime, wash and soak the seeraga samba arisi for 15mins, drain the water and keep aside. (Image 11)
  • When all the steam has released from the pan means, open and check the mutton pieces are cooked up to 90 percent else cook for another whistle. Then add the remaining mint leaves and coriander leaves and mix well. (Image 12)
  • Add in the soaked seeraga samba arisi and mix gently. (Image 13)
  • Add in the remaining coconut milk, mix and bring to boil. (Image 14)
  • Cover and cook for 1 whistle and 3mins over simmer. When all the steam has released, open the pan, mix gently and ready to serve.
