Ingredients :

Kaadai | Quail Biryani Pressure cook
Kaadai | Quail - 4 nos (whole or cutted)
Basmathi Rice - 1 and 1\2 cup
Ginger - 1 and 1\2" long
Garlic - 10 large cloves
Green Chili - 4 no + 4 no
Mint Leaves - 1 tbsp + 1\2 cup
Coriander Leaves - 1 tbsp + 1\2 cup (chopped)
Cinnamon Stick - 2" long
Cloves - 5 no
Green Cardamom - 5 no
Star Anise - 1 no
Bay Leaves - 2 no
Sha Jeera - 1 tsp
Fennel Seeds - 1 tsp
Large Onion - 2 no (sliced)
Curry Leaves - 2 stk
Tomatoes - 2 no (chopped)
Red Chili Powder - 1 tsp
Turmeric Powder - 1\4 tsp
Coconut Milk - 2 and 1\4 cup (1\2 coconut shell)
Lemon Juice - 1 no
Ghee - 2 tbsp
Oil - 1 tbsp
Salt to Taste.

Method :

Steps To Make The Kaadai Biryani | Quail Biryani:

  • Wash and soak the basmathi rice for 15minutes. (Image 1)
  • Grind the ginger, garlic, green chili, one tablespoon of mint leaves and one tablespoon of coriander leaves into paste, keep aside. (Image 2 and 3)
  • To make the biryani, heat the ghee and oil together in a pressure cooker pan, roast the cinnamon stick, cloves, cardamom, star anise, bay leaves, sha jeera and fennel seeds. (Image 4)
  • Add in the onion and curry leaves, saute until the onion turns light brown colour. (Image 5)
  • Add in the tomato and cook until the tomato turns tender. (Image 6)
  • Stir in the ground ginger-garlic-chili mixture paste and saute for an minute. (Image 7)

  • Add in the kaadai | quail and cook for about two minutes. (Image 8)
  • Add in the red chili powder, turmeric powder and required salt and mix well. (Image 9)
  • Add in the mint leaves and coriander leaves, mix well. (Image10)
  • Add in the soaked basmathi rice. (Image 11)

  • Add in the coconut milk and mix gently. (Image 12)
  • Bring to boil and add the lemon juice, mix little. (Image 13)
  • Cook for 1 whistle and 5minutes over simmer. When all the steam has escaped, open the pan, mix gently and ready to serve. (Image 14 and 15)
