Ingredients :

Kambu Siru Thaniyam | Bajra | Pearl Millet - 2 cup
Ulundu | Urad Dal - 1\2 cup
Fenugreek - 1 tsp
Water - as required
Salt - as required.

Method :

Preparation:

  • Wash and soak the kambu with enough water for 3 to 4 hours. Similarly soak the ulundu and fenugreek for 3 to 4 hours.

Steps To Make The Kambu Idli And Dosai Recipe

  • To make the kambu idli and dosai batter, first grind the soaked ulundu and vendayam into fine paste with required water for about 20minutes using wet grinder. (Image 1 and 2)
  • Add the soaked kambu and grind into paste with required water for about 10 to 15mins. (Image 3 and 4)
  • Transfer the ground kambu batter into a bowl. Then add the required salt and mix well. (Image 5)
  • Then cover and set aside to ferment for about 8 to 10 hours. After ferment, the batter will rise well and you can see tiny bubbles. (Image 6)
  • To make the kambu idli or dosai, mix the fermented batter gently and make. Follow the recipe as below.

Steps To Make The Kambu Dosai Recipe:

  • Heat the iron tawa, pour a ladle full of batter in the center and spread into thin circle. (Image 7 and 8)
  • Add a teaspoon of oil around the dosai and cook. (Image 9)
  • When the side turn golden colour, flip and cook till done. (Image 10 and 11)

Steps To Make The Kambu Idli Recipe:

  • Boil 2cm of water in a idli pan. (Image 12)
  • Meantime, grease one or two idli plate with ghee or use wet cloth. Then spoon the required batter into the all round indentations. Arrange the prepared idli plate, cover and steam for 15 minutes over medium flame. (Image 13 and 14)
  • To remove the idli from the cloth, pour little water around each idli and invert on the plate. (Image 15)
  • To remove the idli from the greased plate, use knife or spatula to take out the idli.

Serving Suggestion: Serve the Idli and Dosai with Sambar and Coconut Chutney.
