Ingredients :

Poosanikai kaaraa mani kootu
Kaaramani -1\2 cup
Poosanikai | White Pumpkin - 1 cup (chopped)
Mustard Seeds - 1\2 tsp
Asafoetida -1\4 tsp
Urad Dal - 1\4 tsp
Shallots - 1\4 cup (chopped)
Green Chili - 2 no
Curry Leaves - 2 stk
Turmeric Powder - 1\4 tsp
Coconut Milk 1st Extract - 1\2 cup
Coconut Milk 2nd Extract - 1 cup
Crystal Salt - as required
Oil -1 tbsp

Method :
Poosanikai kaaraa mani kootu

Steps To Make The Poosanikai Kaaramani Kootu With Coconut Milk:

  • Wash and soak the kaaramani with enough water for overnight. Then pressure cook the soaked kaaramani with 1 cup of water and required salt, for an whistle and 2 to 3mins over simmer. When all the steam has released, open the pan and keep aside. (Image 1)
  • To make the curry, heat the oil in a pressure cooker pan, temper the mustard seeds and urad dal, after splutter, stir in the asafoetida. Then add the onion, green chili and curry leaves, saute until the onion turns slightly golden colour. (Image 2)
  • Add the white pumpkin and turmeric powder, stir for few seconds. (Image 3)
  • Then add the soaked kaaramani and required salt, mix well. (Image 4)

  • Add the second extracted coconut milk, mix well and bring to boil. (Image 5)
  • Then cover and pressure cook for 1 whistle and 2 to 3mins over simmer. When all the steam has escaped and open the pan. (Image 6)
  • Finally add the first extracted coconut milk, mix well and cook until bubbles, and then ready to serve. (Image 7 and 8)
