Ingredients :

Raw Jackfruit - 1 and 1\2 cup
Basmathi Rice -  1 and 1\2 cup
Cloves - 5 no
Cinnamon Stick - 2" long
Bay Leaves - 2 no
Star Anise - 1 no
Fennel Seeds - 1 tsp
Onion - 1 no (chopped)
Curry Leaves - 2 stk
Tomato - 2 no (chopped)
Red Chili Powder - 1 tsp
Turmeric Powder - 1\4 tsp
Garam Masala - 1\2 tsp
Green Chili - 4 no
Mint Leaves - 1\4 cup
Coriander Leaves - 1\4 cup
Coconut Milk - 1 and 1\2 cup
Ghee - 2 tbsp
Oil - 1 tbsp
Salt to Taste.

To Grind into Paste


Shallots - 10 no
Green Chili - 3 no
Mint Leaves - 2 tbsp
Coriander Leaves - 2 tbsp
Ginger - 1"
Garlic - 4 to 5 cloves


Method :

Steps To Make The Raw Jack Fruit Brinji:

  • Preparation, cut the raw jack fruit into half. Then remove the skin and center hard part by using sharp knife. Then cut the flash into small pieces and immerse in the water to avoid discoloration, keep aside. (Image 1)

  • Grind the mentioned ingredients into fine paste and keep aside. (Image 3 and 4)
  • To make the raw jack fruit brinji \ biryani, heat the oil and ghee in a pressure cooking pan, roast the cloves, cinnamon stick, bay leaves, star anise and fennel seeds. (Image 5)
  • Add the onion and curry leaves, saute until the onion turns slightly golden colour. (Image 6)
  • Add the ground shallot-mixture paste and saute for an minute. (Image 7)
  • Add the tomato and green chili, saute till the tomato turns soft. (Image 8)

  • Add the raw jack fruit pieces and saute for few seconds. (Image 9)
  • Add the red chili powder, turmeric powder, garam masala and required salt, stir for few seconds. (Image 10)
  • Add the mint leaves and coriander leaves, mix well. (Image 11)
  • Add a cup of coconut milk, mix well and bring to boil. (Image 12 and 13)
  • Cover and pressure cook for an whistle and 3mins over simmer. When all the steam has escaped, open the pan. (Image 14)

  • Meantime, soak the basmathi rice with enough water for 15 minutes.
  • Then drain the water and add the soaked rice into the pressure cooked raw jack fruit mixture, mix gently. (Image 15)
  • Add the remaining coconut milk, one and quarter cup of water, mix well and bring to boil. (Image 16)
  • Cover and pressure cook for 1 whistle and 3mins over simmer. When all the steam has released, open the pan and mix gently, ready to serve. (Image 17)
