Ingredients :

Vazhai Poo | Banana Flower - 1 cup
Thuvaram Paruppu | Toor Dal - 1\2 cup
Turmeric Powder - 1\4 tsp
Asafoetida - 1\4 tsp
Red Chili Powder - 1 tsp
Coriander Seeds Powder - 1 tsp
Tamarind Water - 1\2 cup
Shallots - 1\3 cup + 2 tbsp (finely chopped)
Tomato - 2 no (chopped)
Green Chili - 3 no
Mustard Seeds - 1\4 tsp
Urad Dal - 1\4 tsp
Fenugreek Seeds - 1\4 tsp
Curry Leaves - 2 stk
Coriander Leaves - 2 tbsp (chopped)
Oil - 2 tbsp + 1 tsp
Crystal Salt to Taste.

Method :

Steps To Make The Vazhai Poo Sambar:

  • In a pressure cooker pan, add the thuvaram paruppu, turmeric powder, asafoetida, teaspoon of oil and one and half cup of water, mix well and bring to boil. (Image 1)
  • Cover and pressure cook for 1 whistle and 2 to 3mins over simmer. When all the steam has released, open the pan. (Image 2)
  • Then add the red chili powder, coriander seeds powder and tamarind water. Mix well. (Image 3)
  • Add the vazhai poo, shallots, tomato, green chili and required salt, mix well. Heat and bring to boil. (Image 4 and 5)
  • Then pressure cook for an whistle. When all the steam has released, open the pan and keep aside. (Image 6)

  • Heat the remaining oil in a utensil, temper the mustard seeds and urad dal, after splutter stir in the fenugreek seeds. (Image 7)
  • Add the shallots and curry leaves, saute until the shallot turns golden colour. (Image 8)
  • Add the pressure cooked sambar mixture, mix well and bring to boil. (Image 9)
  • Finally add the coriander leaves, mix well and ready to serve. (Image 10)
